Definition of Chef: The person in charge of the Kitchen (Galley).
As the Chef onboard the Dauntless, here are my favorite things about being in charge of our delicious Dauntless Cuisine!
First, I LOVE to eat good food.
Second, I LOVE to share it.
And third, I LOVE being creative.
One of the best things in life is food, good food. The best food starts with the best ingredients available, fresh, local & organic. I lean towards Paleo and traditional methods of preparation for nutrient-dense foods that taste good and make you feel good. Soaking nuts & beans, as well as lacto fermented salsa, for example, help aid digestion (always a good thing- especially on a boat!) However, the fun and satisfying part of cooking is the ability to be creative as well as flexible to the needs & desires of those partaking in the meal!
Food is meant to be shared. As satisfying as it may be to make a great crab stacked avocado for yourself, it pales in comparison to being able to cook for your guests, knowing that your work is making everyone happy, full and content!
As with most design, the best food is simple with an elegant presentation.
I am always interested in learning more ways to prepare incredible meals for our clients. Whether I am working on homemade guacamole, roasted tomato and red pepper soup, fresh salads with organic greens, goat cheese and roasted nuts to pair with some of our Dauntless sangria, our goal is to satisfy your palette. Once the basic parameters of design are understood, (the best combinations of taste, texture, color,) the options are limitless!
